Apple Burritos
Apple Butter Bundt Cake
No Sugar Apple Pie
Raspberry Poke Cake

 

Apple Butter Bundt Cake (From the cookbook, "Secrets of FatFree Baking")

  • 3/4 cup whole wheat pastry flour
  • 1 1/2 cups unbleached flour
  • 2 tsp. baking soda
  • 2 cups apple butter
  • 2 egg whites
  • 2 cups finely chopped peeled apples (about 3 medium)
  • 1/2 cup dark raisons
  • 1 1/2 Tbs. confectioners' sugar

Combine the flours and baking soda, and stir to mix well.  Add the apple butter and egg whites, and stir to mix well.  Stir in the apples and raisons.  Coat a 12 cup bundt pan with nonstick cooking spray.  Spread the batter evenly in the pan, and bake at 350 degrees for 30-35 minutes, or just until a wooden toothpick inserted in the center of the cake comes out clean.  Cool the cake in the pan for 20 minutes.  Then invert onto a wire rack, and cool to room temperature.  Transfer to a serving plate, sift the confectioners' sugar over the top, slice, and serve.

No Sugar Apple Pie (From the cookbook, "An Apple A Day 2")

  • 4 cups sliced green apples
  • 1 cup apple juice concentrate (frozen, unsweetened)
  • 2 Tbs. corn oil
  • 1 Tbs. Minute tapioca
  • 1 tsp. cinnamon
  • 1 recipe for 2 crust pie

Peel, quarter, and remove core of apple slices.  Heat the apples in apple juice in a medium-sized saucepan.  Cover and let simmer.  Stir in tapioca, cinnamon, and oil.  Pour filling into pastry shell.  Dot with margarine.  Moisten pastry edge and place top crust over pie.  Pinch edges firmly.  Bake at 350 degrees for 30 minutes.  Makes one 9 inch pie.

 Apple Burritos

  • 1 20 oz. can apple pie filling
  • 8 flour tortillas

Lay tortilla on counter.  Spoon 1/4 cup of apple pie filling into center of tortilla.  Fold tortilla into a burrito.  Place in casserole pan.  To serve, heat in microwave.  Garnish with a dollop of plain yogurt.

Raspberry Poke Cake

  • 1 pkg. white cake mix
  • 1 1/3 cup water
  • 2 eggs or 1/2 cup egg substitute
  • 1/3 cup applesauce
  • 1 (3 oz.) pkg. raspberry jello
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 (8 oz.) container Cool Whip, thawed

Prepare cake mix as package direts using water, eggs, and applesauce.  Pour mixture into greased 9x13 cake pan.  Bake at 350 degrees for 30 minutes or until toothpick inserted into center of cake comes out clean.  Cool.  Using a large fork, poke the cake at 1/2" intervals.  In a medium bowl, dissolve gelatin in boiling water.  Add cold water.  Slowly pour gelatin over cake, filling holes left by fork.  Chill in refrigerator until gelatin is set.  Frost with Cool Whip.  Keep refrigerated till ready to serve.  This is a very refreshing dessert.
